Here's a short video featuring Momofuku empire builder David Chang explaining the products emerging from his newest project, the Kaizen Trading Company fermentation lab. As Chang explains, the culinary incubator focuses on two products that "make food more delicious": hozon, a miso-like product that's actually made from pistachios, and bonji, "basically our version of soy sauce." According to Chang, the former can be used in Italian pasta dishes, but provides flavors that are "dramatically different." Go, watch:
