Former Top Chef contestant Fabio Viviani is opening two locations of a quick-service restaurant in Chicago called Mercato by Fabio Viviani. The restaurants will serve a menu featuring individual pizzas and "scratch-made pasta." The first location opened Monday inside the Chase Tower Urban Market Cafe, while the second location is slated to open June 9 as part of a "multi-concept cafe" called Rustle + Roux.
