Watch Alton Brown's Complicated Grilled Cheese Method

Alton Brown will not abide by your Wonder bread and Kraft slices: In the latest installment of his Cook Smart video series, Brown eschews the usual "griddled sandwich containing some melted cheese" to present an actual grilled cheese sandwich made on a charcoal grill.

The recipe requires fresh-grated gruyere and cheddar and a spatula hack using aluminum foil to make cheese-containing trays. The unnecessarily complicated (but linguistically accurate) method requires cooking the shredded cheese in the spatula boats and grilling the bread separately. Go, watch:
