Welcome back to 60 Second Tasting Menu, a fast-paced visual tour of stunning, elaborate, and technically advanced menus currently on offer. In celebration of spring, today's tasting menu is the all vegetable menu at John Fraser's New York restaurant Dovetail. Instead of a stream of foie gras, caviar, and a roasted animal, instead Fraser offers mushrooms, turnips, carrots, asparagus, and a stunning banana dessert.
