Peter Cho, chef April Bloomfield's protégé, is moving from New York City to Portland to open a new restaurant. According to Portland Monthly's Eat Beat, the restaurant will be Cho's first and will be a "wood-fired Korean spot."
There are no details regarding the date and the location but the food will be "centered around a wood-fired hearth." The restaurant will also showcase "his expertise in Bloomfield's school of nose-to-tail butchery," which means meaty things like beef dry-aged in house. Cho has worked his way through many of Bloomfield's New York City kitchens, eventually becoming the executive chef at the Breslin and Salvation Taco.
