The 44 Most Anticipated Openings of Spring 2014

After one hell of a long Winter, it finally seems safe to say hello to Spring and all of the new restaurants that come with it. As usual, Eater has been keeping track of all the major openings hitting American cities coast-to-coast this year and beyond. Now, in honor of the new season, it's time to take a look at America's most highly anticipated restaurant openings of Spring 2014. These include many of Eater's 50 most anticipated restaurants of 2014, but also some new projects that have sprung up or those long-awaited restaurants that have finally set a date.

Las Vegas is a major spot to watch this time around, with the months ahead bringing what Eater Vegas describes as "one of the biggest Spring opening seasons in Vegas history." Big names of all stripes are headed to the Strip: Daniel Boulud, Giada De Laurentiis, Matthias Merges, and the esteemed Guy Fieri are all opening up restaurants in Vegas this Spring.

This Spring, a number of established restaurateurs are expanding their empires. In New York, these include restaurateurs as legendary as Drew Nieporent (Bâtard) and Keith McNally (Cherche Midi), as well as the highly anticipated American debut of Mexican culinary star Enrique Olvera (Cosme). Nearby, Philadelphia chef Mike Solomonov has a pair of concepts in the works (Dizengoff, Abe Fisher), while Jose Garces is on the verge of opening a much-hyped ticketed tasting menu restaurant (Volver). Chef Hugh Acheson is spreading his tentacles further throughout the state of Georgia with his Savannah debut (The Florence), and the chefs behind LA's wildly successful Trois Mec — Jon Shook, Vinny Dotolo, and Ludo Lefebvre — are opening a wine bar next door in mere weeks (Petit Trois).

Aside from those keep an eye out for brick-and-mortar locations for food trucks such as Houston's Bernie's Burger Bus and pop-ups such as Detroit's Guns & Butter and Milkfish in New Orleans. Other names on this list: Rick Bayless, John Tesar, Jonathon Sawyer, Chris Cannon, Masaharu Morimoto, Adam Fleischman, Spike Gjerde, James Syhabout, Cesar Ramirez, Casey Thompson, and more. So do watch out: Spring is coming.


Atlanta

Projected Opening: April 2014
The team behind Atlanta's Octopus Bar is set to open a new raw seafood-focused restaurant named Lusca after a Caribbean Loch Ness Monster-type creature. Eater Atlanta noted last month that this "highly anticipated" newcomer will have both a raw bar and an in-house butcher. Chef Angus Brown says they're aiming to open the week of April 20, so do look out for that.


Austin

Olamaie

Projected Opening: Spring 2014
It's been a longish road for Austin's forthcoming modern Southern restaurant, but Olamaie's owners tell Eater Austin editor Meghan McCarron that they're hoping to open as soon as late Spring, depending on permitting issues. Co-executive chefs Michael Fojtasek and Grae Nonas announced Olamaie last Summer, and a series of pop-up dinners has kept excitement levels high ever since.


Baltimore

Parts & Labor

Projected Opening: April 2014
Baltimore restaurateurs Spike and Amy Gjerde are getting set to open up Parts & Labor, a combination restaurant and butcher shop that will support the food system surrounding their flagship Woodberry Kitchen. The restaurant features a menu built around a stone hearth, meaning a lot of "one-pot" dishes, 20 kinds of sausages, cured meats, and more.


Boston

Bastille Kitchen

Projected Opening: April 2014
Mistral co-owner Seth Greenberg is getting closer to opening Bastille Kitchen, an 11,000-square-foot bistro that Eater Boston reports will focus on Southern French cuisine. Former Ritz-Carlton chef Adam Kube will be in charge of the kitchen at Bastille Kitchen.


Charleston

Leon's Oyster Shop

Location: 698 King St., Charleston, SC
Partners: Tim Mink and Brooks Reitz
Projected Opening: April 2014
Anticipation is running high in Charleston for the impending opening of Leon's Oyster Shop, which Eater Charleston reports will feature fried chicken, fish, and a raw bar, as well as seafood-themed tiling, and chef Ari Kolender (formerly sous chef at The Ordinary) helming the kitchen. Co-owner and Eater Young Gun Brooks Reitz tells Eater that they're "in the final stretch," aiming to open at the end of this month.


Chicago

Top Chef alum Beverly Kim and her husband John Clark are opening their Korean-American neighborhood restaurant Parachute in Chicago next month. Eater Chicago writes that diners should expect dishes such as mung bean pancake with pork belly, black garlic, and kimchi, while Parachute's Kickstarter explains that it will focus on seasonal ingredients with traditional and communal seating.

XOCO Wicker Park

A Spring opening looks to be in the cards for the Wicker Park outpost of Chicago chef Rick Bayless' XOCO restaurant. As Eater Chicago reported in the Fall, this new location will offer the same Mexican street food and snacks as the original location in River North, but will offer a larger space with table service and a bar. A rep says to expect it to open by the end of June; after that, keep an eye out for Bayless' other forthcoming project, details of which remain a mystery.


Cleveland

Trentina

Projected Opening: Mid-May
Cleveland's acclaimed chef Jonathon Sawyer and his business partner wife Amelia are expanding their restaurant empire this Spring with the opening of Trentina. Funded in part by Kickstarter, the restaurant will highlight the cuisine of Northern Italy's Trentino province.


Dallas

Projected Opening: Late April
Dallas chef John Tesar is getting set to open his meat-focused restaurant Knife in the Hotel Palomar at the end of this month. Eater Dallas reports that Knife will be an update on the steakhouse, with unusual cuts, in-house charcuterie and pasta, shareable meats, and things like a whole pig's heat on the menu. Also expect to see house-made hot dogs, a 240-day dry-aged ribeye, and a bacon tasting.

Stock & Barrel

To the delight of Dallas locals, former Nosh chef Jon Stevens is finally striking out on his own in Dallas with Stock & Barrel. Eater Dallas reports that the restaurant should open this month with a wood-burning grill and rotisserie, open kitchen, house made pastas, and an entire section of its menu devoted to fried potatoes.


Denver

Argyll Whisky Beer

Projected Opening: Summer 2014
Beloved former gastropub Argyll returns to life this spring in Uptown Denver two years after its shutter in Cherry Creek. This new reincarnation is dubbed Argyll Whisky Beer and, appropriately, aims to house the largest whisky collection in the state of Colorado when it opens. Chef John Broening (of Le Grand Bistro & Oyster Bar and Spuntino) will be responsible for the food here. According to Eater Denver, Argyll Whisky Beer is aiming to open in mid-May with dishes such as Scotch eggs and seafood sausages.


Detroit

Guns & Butter

Projected Opening: Spring 2014
Eater Detroit's 2013 Chef of the Year Craig Lieckfelt is aiming to open his brick-and-mortar Guns & Butter this Spring, according to Eater Detroit editor Victoria Trudeau. Lieckfelt has been wowing Detroit with pop-up dinners for some time now, and the people of Motor City are eagerly awaiting this permanent space.


Houston

Bernie's Burger Bus

Chef: Justin Turner
Projected Opening: Early May 2014
Since it debuted in 2010, people in Houston continue to just lose their minds over the burgers at chef Justin Turner's food truck, Bernie's Burger Bus. In May, they'll be able to lose their minds all over again when this food truck goes brick-and-mortar with this location in Bellaire that includes a school bus as part of its decor. Turner tells Eater Houston's Darla Guillen that it's looking like a May opening.

Common Bond

Projected Opening: April 2014
Eater Houston projects an April opening for the highly anticipated new cafe from chef/owner Roy Shvartzapel, whose resume includes the likes of elBulli and Bouchon. Common Bond brings together a group of pedigreed pastry chefs and bakers (all of whom previously worked with Shvartzapel), both sweet and savory dishes, plus beer and wine.


Las Vegas

DB Brasserie

Projected Opening: May 2014
Daniel Boulud is aiming to open DB Brasserie at the Venetian in Las Vegas this coming May, according to Eater Vegas. The restaurant will be "an updated version" of the DB Brasserie that Boulud closed in Vegas back in 2010, offering French cuisine and "signature brasserie dishes with a modern twist," as a rep tells Eater Vegas.

Projected Opening: May 21, 2014
Food Network star Giada De Laurentiis is opening her first restaurant ever in Las Vegas this year at The Cromwell. Eater Vegas has all the design details for Giada, from the open kitchen, antipasto station, and gigantic retractable windows, as well as menu details: De Laurentiis herself told Eater Vegas that some of the menu "will be traditional family recipes, and others the lightened-up California-style food I'm known for — my lemon spaghetti and butternut squash lasagna." There will also be an "Italian dim sum brunch" on carts.

People of Las Vegas, it's time to brace: Renowned UNLV grad and (honorary) doctorate Guy Fieri is back in town with plans to open Guy Fieri's Vegas Kitchen & Bar this month. As Eater Vegas warns, Fieri is preparing to unleash some global fusion, including General Tso lollipop chicken wings and "Vegas" fries, which are steak fries tossed in Buffalo sauce and topped with blue cheese. Also, shots will be served out of iced dispensers.

Projected Opening: This week
Chicago chef Matthias Merges should be opening his highly anticipated Las Vegas outpost of Yusho as soon as this week, according to Eater Vegas. And, per some earlier intel, the Vegas edition of this Japanese street food restaurant will offer dishes like twice-fried chicken, a few varieties of ramen, steam buns, and pickled vegetables.


Los Angeles

Projected Opening: Spring 2014
Building upon the enormous success of Trois Mec, chefs and restaurateurs Ludo Lefebvre, Jon Shook, and Vinny Dotolo have announced plans for a second restaurant just next door. Eater LA brings word that Petit Trois is mere weeks away from opening and will offer a "wine bar-type experience serving well-executed French cuisine."

Projected Opening: April/May 2014
Umami founder Adam Fleischman will debut his newest restaurant concept, ChocoChicken, sometime in April or May, per the restaurant's official Twitter feed. And, yes, as its name suggests, ChocoChicken will be serving chocolate chicken. More specifically, Eater LA describes it as "a version of new school fried chicken wherein the chicken's fry batter is infused with chocolate." There will also be house-made biscuits, and a full bar.


Miami

Miami has longed for Iron Chef Masaharu Morimoto to open up shop along its shores and, lo and behold, this year that dream is coming true. Morimoto is slated to open at the Shelborne Wyndham Grand in South Beach serving contemporary Japanese cuisine. Per Eater Miami editor Ana Heretoiu, Morimoto is aiming to open up in early June.

L'Echon Brasserie

Owners: Andreas Schreiner, Jose Mendin, and Sergio Navarro
Projected Opening: Late April/early May 2014
The team behind Miami's beloved Pubbelly is gearing up to open a new one this Spring, named L'Echon Brasserie. Eater Miami editor Ana Heretoiu says that L'Echon Brasserie should open in late April or early May, while restaurateur Andreas Schreiner explains that the concept will offer French brasserie fare with a Pubbelly spin. Expect rabbit dumplings, bone marrow, escargot, and more.


Minneapolis

In the highly anticipated Brasserie Zentral, Meritage restaurateurs Russell and Desta Klein will feature continental European cuisine. That will include the likes of "schnitzel, Belgian frites double-fried in beef fat, and whole roasted chicken for two stuffed with brioche and foie gras," per Eater Minneapolis, which also points out that Brasserie Zentral has already begun accepting reservations for its opening night on April 21.


Morristown, NJ

Projected Opening: Late Spring 2014
New York restaurateur Chris Cannon is moving along with his forthcoming New Jersey project, Jockey Hollow Bar & Kitchen. The Daily Record reports that the four-part restaurant project is aiming to open in late Spring. Per its website, these concepts will include an oyster and wine bar, a 1920s-style cocktail lounge, a private event space, and a second-floor dining room with a focus on regional and sustainable American-Italian cuisine. The rest of the team has yet to be revealed, so stay tuned.


New Orleans

Restaurant watchers have been looking forward for quite some time to Root chef Phillip Lopez's forthcoming project Square Root. Eater NOLA writes that the concept here "is pretty revolutionary" in the local dining scene as one of the few tasting-menu-only restaurants out there. Square Root has 16 seats wrapped around an open kitchen, plus a small cocktail-focused bar upstairs.

Projected Opening: April 2014
Chef Cristina Quackenbush's Filipino pop-up restaurant Milkfish is finally getting permanent digs this month, an opening that Eater NOLA calls "a truly unique gem." The menu includes dishes such as fried rice with Filipino bacon, chicken or pork adobo, oxtail stewed in peanut butter, a pork face and chicken liver dish, and more.


New York City

This Spring, restaurateur and legend Drew Nieporent will open a new French restaurant named Bâtard in the Tribeca space that was last home to Corton. Nieporent tells Eater NY that this restaurant will "be more user-friendly than Corton," later explaining further that the food will not only be French but European, with dishes like sweetbreads and rabbit. His partners in the restaurant include chef Markus Glocker and former Daniel maitre d' John Winterman.

Brooklyn Fare Manhattan

Cesar Ramirez's upcoming Brooklyn Fare Manhattan is what Eater NY calls "the most anticipated Hell's Kitchen restaurant of all time." Jared Sippel, formerly of Frasca Food & Wine, is running the kitchen here with a menu "heavily influenced by France and Italy." A floor plans reveals a handful of tables, counter seating for 15, and a garden area/wine bar.

Cherche Midi

Last Fall, New York icon Keith McNally announced plans to shutter his four-year-old Pulino's and replace it with a French restaurant named Cherche Midi. McNally told Eater NY at the time that chefs Shane Mcbride and Daniel Parilla will be in charge of the kitchen; the whole thing is heavily plywooded at the moment, but a website indicates a Spring 2014 opening.

Mexico City chef Enrique Olvera — he of the world-renowned restaurant Pujol — is headed to New York City this year to amp up the Mexican food game there in a big way. Olvera's first New York City restaurant will take a casual approach to Mexican cuisine, and it will come along with a Brooklyn tortilleria. Olvera tells Eater that he's aiming to open Cosme in June.

Projected Opening: Spring 2014
David Waltuck, chef of the beloved and shuttered Chanterelle, announced earlier this year that he plans to open a new restaurant in 2014. Waltuck told Eater NY back in February that élan will offer his "contemporary cuisine rooted in classic French technique," and that it was slated to open in a few months.


Oakland

The Dock at Linden Street

One of the Bay Area's most exciting openings this year, The Dock at Linden Street is a collaboration between Commis chef James Syhabout and Linden Street Brewery's Adam Lamoreaux. According to Eater SF, this restaurant and beer garden will offer "globally-inspired food" that will be designed to complement the beer. As usual, it's hard to predict opening dates, but Lamoreaux tells Eater that a June opening "is entirely likely."


Philadelphia

Dizengoff and Abe Fisher

Projected Opening: June 2014
Mike Solomonov and Steve Cook — the restaurateur duo behind the likes of Zahav and Federal Donuts — are at it again. This Spring, they're opening two new Philadelphia restaurants: a hummusiya named Dizengoff, and a 50-seater named Abe Fisher, which Eater Philly reports will "focus on cuisine of the Jewish diaspora." A rep says to look for it by the end of June.

Jose Garces is expanding his Philadelphia empire again this year with the long-awaited addition of Volver at the Kimmel Center. The high-end restaurant will have a caviar and champagne lounge, a pre-theatre prix-fixe menu, and Garces himself will be cooking out of this particular kitchen, according to Foobooz. Eater Philly has a sneak peek trailer for Volver, noting that Bar Volver opens on April 9 while the main dining room — for which tickets are now available — opens on April 16.


Portland, ME

Sicilian street food is the name of the game at Slab, the highly anticipated new restaurant from the man who Eater Maine calls "a Portland culinary rockstar." Stephen Lanzalotta is teaming up with a whole crew of partners to open Slab, which will offer his beloved Sicilian Slab pizza, as well as open-faced "shoe" sandwiches, appetizers, desserts, and coffee. Eater Maine took a look at the buildout and menu, reporting that Slab should open in mid-May.


Portland, OR

Projected Opening: April 14, 2014
Portlanders are eagerly awaiting the impending opening of Kachka, a Russian restaurant from chef Bonnie Morales and her husband, former Oven & Shaker general manager Israel Morales. Eater PDX reports that the 50-seat space will emphasize its cold appetizers — such as cured fish, pickled veggies, and salted herring with new potatoes — a row/caviar service, Siberian dumplings, summertime soups, and more.

Son of a Biscuit

Portland empire-builder Micah Camden and Katie Poppe are expanding their portfolio yet again with the forthcoming Son of a Biscuit, a fried chicken restaurant. Eater PDX reports that the restaurant should open this Spring with a chicken-only menu, similar to Camden and Poppe's popular Little Big Burger mini-chain.


San Diego

Ironside Fish & Oyster is the latest from CH Projects, the restaurant group behind the likes of Polite Provisions and Soda & Swine. Eater San Diego reports that this newcomer will have a tank of live seafood, piranhas on the bar, and a rum-inspired drink menu from bar manager Leigh Lecap.


San Francisco

Aveline/The European

Former Top Chef contestant Casey Thompson will be opening her first San Francisco restaurant this Spring with the debut of Aveline in the Warwick Hotel. Eater SF reports that this modern California restaurant will offer "refined casual fare" and cocktails from Adam Wilson, formerly a lead bartender at Beretta. Per a rep, Wilson will open The European in tandem with Aveline in late April or early May with a bar menu from Thompson as well.


Savannah

With Cinco y Diez up and running in Athens, Hugh Acheson is now getting ready to open The Florence, a two-story Italian restaurant (with a beer garden) in the lovely Savannah, Georgia. As previously reported, The Florence "will blend Italian and Southern flavors" with a menu that includes pasta, pizza, vegetable courses, seafood, and more. Eater Atlanta reports that The Florence will be opening in May with chef Kyle Jacovino in the kitchen.


Seattle

Brunswick & Hunt

Look for the debut of Ballard newcomer Brunswick & Hunt as soon as mid-May, according to a rep for the restaurant. Eater Seattle reports that local restaurateur brothers Barry Rogel and Scott Rogel are behind this "farm-to-neighborhood" restaurant that will feature nose-to-tail cooking and small farm sustainable proteins.


Somerville, MA

La Brasa

The long-awaited Somerville restaurant from chef Daniel Bojorquez is finally on the verge of opening its doors. Eater Boston reports that La Brasa's menu will feature dishes cooked over live fire with influences from Mexico, Peru, France, and the Middle East, among other regions. It also has a super cool exterior.


Washington, DC

Compass Rose

Projected Opening: April 12, 2014
Compass Rose will open on DC's restaurant-filled 14th Street corridor just about any day now from restaurateurs Rose Previte and Mike Schuster. Eater DC took a look inside the space that channels Compass Rose street food theme and global vision. John Paul Damato, who previously served as executive chef for José Andrés' three local Jaleo outposts, is manning the kitchen, and a Change.org petition reveals that they'll have dishes like kabobs, baked pies, and Georgian cheese bread.

It's been a tease for some time now, but this looks to be the year that wunderkind Erik Bruner-Yang opens his sophomore effort Maketto on DC's H Street NE. The Toki Underground chef is teaming up with Will Sharp of clothing label DURKL on the project that will channel an Asian night market, with a chef's table, patio seating, a coffee bar, and more. Get excited.
