Watch a Teaser for Massimo Bottura's Upcoming Book

Celebrated chef Massimo Bottura will release his first book, Never Trust a Skinny Italian Chef, with Phaidon later this Fall, but here's an early teaser revealing what readers can expect. According to Phaidon, the book will feature four chapters each marking a different stage in Bottura's career at Osteria Francescana, highlighting 50 recipes that represent how a man who grew up "in a land of fast cars and slow food" approaches fine dining.

In the video above, Bottura reveals one of his philosophies while plating one of the restaurant's many signature dishes, the playfully named "Oops, We Dropped the Lemon Tart": "As the Romans would say, have a very quick thought but do it slowly." Go, watch:
