On fine dining: "Most fine dining restaurants have gone by the wayside, and the very few that still exist I mean, I love La Grenouille, but I ate there the other night and it's a much older crowd. I think it's fine as long as they can re-acquaint themselves with a new clientele. But people have now finally cut through the facade of fine dining. It was too much of a ritual." [Eater NY]
