NYC chef Alex Stupak (Empellon) tells Eater NY that he will be creating a tortilleria in NYC to provide homemade tortillas to his two (soon three) restaurants: "Custom-made equipment is being built for us in California as I write this. Our new place will go from kernel of corn, to nixtamal, to masa, to tortilla...and will become a purveyor for our other two spots." [Eater NY]
