Enrique Olvera to Open a Brooklyn Tortilleria

After confirming in September that he is in fact planning an NYC restaurant, acclaimed Mexican chef Enrique Olvera of Pujol (#3 on Latin America's 50 Best restaurants list) reveals more details about the upcoming Cosme. Olvera tells Food Republic that he is opening "a tortilleria in Brooklyn" to provide tortillas to his Manhattan restaurant. Olvera says he aims to open Cosme in June, and that there will be "killer" guacamole: "You pay your rent with the margaritas and guacamole." That advice apparently came to Olvera from Empellon chef Alex Stupak.
