Here's Michelin director Michael Ellis on why Noma didn't get a third star in this year's Main Cities of Europe guide: "Noma is a fantastic restaurant and René Redzepi is a brilliant chef. We just haven't found yet, up to now, the third star ... We go back every single year and we're going to continue to go back.
