The New York Post's Steve Cuozzo rails against the DOH today in response to Per Se's pending C letter grade, writing that some rules "are inimical to first-class cuisine and ignorant of modern cooking techniques." Furthermore, "while Per Se can laugh off the $5,000 it might pay to have its "Grade Pending" restored to an "A," it's another story for tiny, mom-and-pop eateries." [NYP]
