Here's a video from Munchies's new series Hunter and Gatherer: The clip follows a sea urchin diver in Santa Barbara named Stephanie Mutz as she scours the ocean for the prized food, which is often known as "California gold." Mutz — who is in her thirties — reveals that she is quite young for the business, as "most sea urchin divers are around 62." She adds that not all sea urchins are full of good uni, and that the business is often hit-or-miss. But what uni she does find, she sells directly to customers at the Dory Fleet Market, meaning that their uni is about as sea-to-table as you can get. Go, watch Mutz in action above.
