In the tradition of its annual "Best New Chefs" award (see the 2014 winners here), Food & Wine magazine has now revealed its 2014 list of the Best New Pastry Chefs, bestowing the title upon five recipients:
Jared Bacheller, L'Espalier, Boston
Sam Kincaid, Fork, Philadelphia
Greg Mosko, North Pond, Chicago
Sarah Rich, Rich Table, San Francisco
Jennifer Yee, Lafayette, New York City
In a statement, F&W editor Dana Cowin argues that "pastry chefs are transforming American classics like s'mores into hyper-elegant desserts and using molecular techniques to invent playful, beautiful sweets." (Sarah Rich's included dessert is the take on s'mores, adding tarragon and almond butter crunch to the campfire classic.)
It's been a good year for Sam Kincaid: This summer, she was named a member of Eater's Young Guns class of 2014. Lafayette's Jennifer Yee, meanwhile, was on the long list of nominees for the 2014 James Beard Awards (in the Best Pastry Chef category, obviously). Food & Wine has brief interviews and "deconstructed desserts" with each chef in its announcement slideshow here.
