Here's a look inside the root cellar at Sweden's Fäviken — the #19 World's Best Restaurant — courtesy chef/owner Magnus Nilsson. In this online exclusive from Nilsson's upcoming section of PBS's The Mind of a Chef, Nilsson describes how vegetation is picked, stored, and catalogued underground. "The climate in here mimics the climate in the ground," Nilsson says, pointing out the unique ecosystem inside the underground cellar. "This particular turnip here already thinks it's spring, so it's started to sprout a little bit. All of these root vegetables here, they're going to start feeling spring is on its way."
