Here's a clip from PBS's James Beard award-winning series The Mind of a Chef, featuring chef Magnus Nilssen going hard on the umami. The Fäviken chef cooks up a dish specifically designed to show off "beefy" flavors, pairing a five-month aged ribeye with sugar kelp and a secret weapon Nilssen calls "tasty paste," a soy sauce-like product that's basically "pure umami." (The second and third secret ingredients are fermented mushroom powder, kelp oil, and a ton of butter.) Go, watch.
