Here's a preview from National Geographic Channel's upcoming miniseries EAT: The Story of Food, which will premiere Friday, November 21. In the following clip, famed North Carolina pit master Ed Mitchell talks what about encompasses the "perfect bite" of barbecue — generally speaking, it involves striking a balance between smoke and meat. Mitchell also reveals his barbecue sauce loyalties, with two versions ("Western" and "Eastern") prevalent in the Carolinas. "I'm from the eastern part of the Carolinas and we use the vinegar-based sauce. I live and die by the fact that the vinegar base is the best flavor."
