Here's the official trailer for the upcoming grain-focused documentary The Grain Divide, featuring many chefs, bakers, and food-industry thinkers wondering about the best way to change America's approach to grain. While many Americans are actively avoiding grain, breads, and gluten, "wheat is who we are," argues Blue Hill Barns chef/owner Dan Barber. Filmmakers speak to the likes of Tartine Bakery's Chad Robertson, famed pizzaiolo Chris Bianco, writer Michael Pollan, and more about how to re-focus on grains. "We did it with everything else — with fruits and vegetables, with animals, with fish," says chef Marc Vetri. "So why not wheat?"

Barber sums it up best. "It's so intoxicating to buy into the industrial system of grain, because they make it so easy," he says. "How do you change the culture around looking at a wheat seed as a fresh product? That's going to change the world." The Grain Divide plans a late-2014 release; for now, watch the trailer above.
