After 11 years at the helm of his groundbreaking New York restaurant wd~50, chef Wylie Dufresne is writing a cookbook. The cookbook will be published by Anthony Bourdain's line of books for Ecco, the publisher confirms. Previously Bourdain has published Roy Choi's LA Son, Daniel Vaughn's The Prophets of Smoked Meat, and more. Cookbook writer and Lucky Peach co-founder/editor Peter Meehan (Momofuku, The Frankies Spuntino Kitchen Companion & Cooking Manual) is on board as Dufresne's co-author. The cookbook will be photographed by Fool Magazine editor P-A Jorgensen. The untitled book is currently slated for publication in 2015, but that is not set in stone.
Meehan tells Eater that because the book is Dufresne's first, "wd~50 will be front and center because that's where he's spent a huge part of his career." It's also important to note that the book will be published well after wd~50 shutters on November 30th. "Mayonnaise will be fried," Meehan adds.
Jorgensen says that the photography, currently underway now, will have a "bare bones, catalogue-ish" style, "almost like museum piece[s] in a way." Jorgensen is also planning to shoot the final week of service at wd~50. See below for some sneak peeks at the photography process so far:
