If Lockhart, Texas is known for anything, it's barbecue. Among the halls of smoked meats that line its streets is the mammoth Kreuz Market, where brisket and sausage is served out of brick pits billowing with smoke and cord upon cord of post oak is carefully stacked out back. Below, pitmaster Roy Perez slices brisket on a Tuesday afternoon.
