Acclaimed Madison, Wisconsin chef Tory Miller has announced plans to open a third restaurant. The James Beard Award-winning chef of L'Etoile and Graze tells the Wisconsin Sate Journal that he and his partners have signed a lease in a brand new high rise development called the Constellation. And it will be big: The space clocks in at 2,800 square feet with an additional 1,200 square foot patio.
Miller has not confirmed a name or precise concept for the upcoming restaurant, but at this point he's planning a "late-night noodle bar," a "dim sum brunch," and a menu that will borrow from Chinese, Korean, Japanese, and Vietnamese cuisine. Other restaurants in the same development will include a new local coffee shop and the just-opened Star Bar. Miller's restaurant is slated to open this June.
