Watch Danny Bowien Make Mission Cantina Chicken Wings on Jimmy Fallon

Hillary Dixler Canavan is Eater's restaurant editor and the author of the publication's debut book, Eater: 100 Essential Restaurant Recipes From the Authority on Where to Eat and Why It Matters (Abrams, September 2023). Her work focuses on dining trends and the people changing the industry — and scouting the next hot restaurant you need to try on Eater's annual Best New Restaurant list.

Last night, bicoastal chef Danny Bowien was on Late Night with Jimmy Fallon to promote his white hot new NYC restaurant Mission Cantina and show off his brand new short haircut. Bowien prepares a "Mexican-themed" sake bomb made with horchata, rum, and no sake. Bowien also makes chicken wings with Cantina hot sauce, letting former fried chicken restaurant owner Questlove handle the actual frying. The three men chug their rum horchata non-sake bombs, leaving Fallon unable to chop chilis, saying of his chopping: "It's so thin you can't even see them!" Bowien also reveals his secret for wings, which Fallon calls the first-ever cooking tip on the show (spoiler alert: Bowien uses a freezer). Go, watch:
