Ken Oringer's Boston restaurant Uni Sashimi Bar is known for its omakase menu, and here now, a stop-motion animated look at some of sushi chef Tony Messina's favorite preparations. Among them: breaking down hamachi, creating the restaurant's namesake uni dish (served with quail egg yolk, pomegranate seed, and caviar), and working with an extremely phallic (and thus hilarious looking) geoduck.
