The book, which Blumenthal says comes as a result of "12 years of research into historic British cooking," takes a close look at historic British gastromony, often using original recipes as inspiration for new, modern dishes: "I discovered we have a heritage of cooking food that was, at one point, the envy of Europe," Blumenthal says.
