Kokonas and Achatz Are Negotiating Aviary Expansion

Back in February 2012, Nick Kokonas and Grant Achatz revealed plans to expand their Chicago cocktail bar The Aviary to New York City and beyond (even internationally). So what's the status of their expansion plans now? Kokonas did an email interview with Aviary is Haunted in which he explains that potential new locations are still in the works. Kokonas says: "We are in negotiations with a high-end hotel group to open in several cities over the next few years ... I think we've found the right situation and am hoping that we can iron out the details over the next month or two." He also notes that though he is hopeful, he still has "no idea if it will come to fruition." These would be the team's first projects outside of Chicago.

Kokonas also reveals that he and Achatz are planning another Chicago bar, which will be "drinks only." He doesn't reveal the name, but does say he hopes to open by the end of 2014. He says: "It won't be what you expect at all." RedEye reports that the concept is "nearly finalized," but that a location has not yet been confirmed. Stay tuned.
