The theme of this year's MAD Symposium was "Guts," and Italian butcher Dario Cecchini took that quite literally. Cecchini came on stage to the tune of AC/DC's "Hell's Bells," cutting open a pig so that its intestines, stomach, and other innards tumbled out. Cecchini discussed the importance of valuing the gift of an animal's life, and utilizing as much of it as one can. Butchers, says Cecchini, are the key to conscientiously making the best use of animal products, because while "It's easy to say nose-to-tail," it's another thing to practice it. While the video below is not quite on the level of Alex Atala killing a chicken on stage, it's not for the faint of heart.
