With the help of a historian, chefs at Fergus Henderson's St. John recreated an 18th-century recipe for what was deemed the "ideal" prison dish: a "Devonshire Pie" featuring tripe, spleen, gooseberries, and potatoes. The pie was originally devised as a cheap but nutritious way to feed inmates; Henderson says the dish may end up on the St. John menu in the near future. [BBC]
