The New York Times takes a look at an aging chef in what is generally thought of as a young man's business: Mark Peel, 58, has taken a step back after decades on the line resulted in a bad back, sore shoulders, and carpal tunnel, and is opening a scaled back location of his restaurant Campanile at LAX after shuttering the original location.
