Here's a look at why Saison in San Francisco "just breaks even" despite serving a $248 tasting menu, the city's most expensive meal. Apparently, the Michelin-starred restaurant's knives can cost $12,000 each, abolone liver costs over $30 a pound, and just one of Saison's 16 dessert bowls by potter Yoshiyuki Shimizu costs $560.
