Small vendors are having a difficult time competing in the world of state fair food sales because of stricter health codes, public demand for innovation, and larger, better-financed vendors. Says a manager from the Minnesota State Fair: "You can't go to the state fair to try your great new product using a folding table and grandma's turkey roaster anymore." [WSJ]
