Here's a video from the UK-based Observer which shows highlights of a trip to the Amazon with Brazilian chef Alex Atala of D.O.M. (currently ranked #6 in the world). This trip to Brazil was the subject of a cover story in Observer Food Monthly, for which Atala posed with a dead fish.
The video finds Atala explaining the goals of his ATA foundation ("to take better care of the relation between man and food") and celebrating the foundation with a ritual campfire ceremony with the local Baniwa community. Atala also visits a Baniwa farm that grows chillis used at D.O.M. Speaking to the farm community, Atala explains that his interest in Brazilian ingredients is what first brought him to the Amazon and he tells the group: "That is how I started cooking and that is how I will continue cooking: trusting our products."
