The New York Times' Pete Wells bestows two stars upon Wylie Dufresne's new casual restaurant Alder. He calls Dufresne "mad" in many categories — mad marine biologist, mad zoologist, mad neurologist — as Alder's food messes with diners' expectations and mental neurons.
