Hillary Dixler Canavan is Eater's restaurant editor and the author of the publication's debut book, Eater: 100 Essential Restaurant Recipes From the Authority on Where to Eat and Why It Matters (Abrams, September 2023). Her work focuses on dining trends and the people changing the industry — and scouting the next hot restaurant you need to try on Eater's annual Best New Restaurant list.

Roth mostly finds fault with the price and with the idea of doing a multi-course menu at a restaurant's bar: "[T]he salon menu is both pricey and formal, occupying a weird gray area between bar bites and the kind of high-end experience that Skenes is aiming for in the main dining room ... it may be that the concept of a bar menu at a restaurant like Saison is flawed from the start."
