In this entertaining installment of Eatocracy's "Secrets" video series, the cameras roll as Southern chefs John Currence (Oxford, Mississippi's City Grocery) and Kelly English (Memphis's Restaurant Iris) tell tales they probably shouldn't, including dishing about having to bail line cooks out of jail and how their restaurants counteract badly behaving guests. English admits " we definitely keep a list" of bad tippers, often denying them a table when they call for a reservation.
