amass.jpgThe big thing for chefs of Michelin-starred restaurants, especially Noma alums, to do nowadays, is to open smaller and relatively cheaper "casual dining" restaurants with a similar cooking ethos. Some such projects: The Hinds Head (Fat Duck chef Heston Blumenthal), Gustu (Noma co-founder Claus Meyer), and Amass (ex-Noma, ex-Per Se chef Matt Orlando), which is slated to open today. [CNN]
