Gotham Bar and Grill chef-partner Alfred Portale will be releasing a "vegetarian recipe journal" this summer titled Greenmarket to Gotham. According to the release, there will be 36 original recipes in the 12-chapter cookbook, with each chapter featuring a menu inspired by a farm from NYC's Union Square Greenmarket.
Some recipes will also include suggested wine pairings from Gotham Bar and Grill wine director Eric Zillier. Greenmarket to Gotham will be out June 21, but for those interested, the book is currently on presale for $22 from Haute Life Press (pre-order here). Ten percent of all sales will benefit local charity GrowNYC.
Portale is a three-time James Beard Award winner and has appeared not once, but twice on HBO's New Orleans-based Treme. Anyway, check out the full press release for all the details:
CHEF ALFRED PORTALE OF GOTHAM BAR AND GRILL
RELEASES VEGETARIAN RECIPE JOURNAL THIS SUMMERNew York, NY — Chef Alfred Portale, a three-time James Beard Award winner, is known as one of the most influential in the movement to use fresh, local ingredients in cooking. He has collaborated with farmers from the Union Square Greenmarket since taking the helm of the kitchen at Gotham Bar and Grill almost three decades ago. Portale is celebrating his love of the Greenmarket and its purveyors with a new compilation of vegetarian recipes, to be released this summer, with a portion of proceeds benefiting GrowNYC's educational initiatives.
The Gotham Bar and Grill GREENMARKET TO GOTHAM: 12 Farm Vegetable Menus By Chef Alfred Portale (June 21, 2013; $22.00; Haute Life Press) is the perfect companion to summer shopping at the Union Square Greenmarket as it highlights 12 Greenmarket farms Chef Portale has worked with in his 28 years as Executive Chef at Gotham Bar and Grill.
"I have been walking through the Union Square Greenmarket for decades—at times with a vision in mind, sometimes in search of inspiration," writes Chef Portale. "The farmers feel like my extended family as we have grown—personally and professionally—alongside one another."
With 36 original recipes and beautiful photography, each of the 12 chapters highlights a farm with two savory recipes—one appetizer and one entrée—and one dessert recipe. Several recipes also included suggested wine pairings from Gotham Bar and Grill's wine director Eric Zillier.
Featured farms in the cookbook-meets-magazine include Eckerton Hill Farm and Berried Treasures Farm, highlighted in dishes like Chilled Tomato Soup with Tri-Star Strawberries, Heirloom Tomatoes, Cucumber, Lemon Verbena, Red Onion and Spaghetti Puttanesca with Ripe Summer Tomatoes, Capers and Chili Flake and Reggiano Parmesan.
Greenmarket to Gotham compiles recipes from Chef Portale's annual summer Greenmarket to Gotham vegetarian prix fixe menus from the last three years. Chef Portale began this prix fixe menu in 2010 as way to pay homage to his neighbor and friends at GrowNYC's Union Square Greenmarket. The Greenmarket to Gotham prix fixe lunch menu will begin once again this summer on June 10. The prix fixe is $28 for two courses, $34 with a Greenmarket dessert. As with each year, 10% of all Greenmarket menu revenue will be donated to GrowNYC's educational initiatives.
The recipes and stories from the farmers are sure to inspire home cooks to craft nutritious vegetarian dishes from their local greenmarket. Greenmarket to Gotham will be available for purchase at Gotham Bar & Grill and online at shop.gothambarandgrill.com. The book will be available for pre-sale beginning June 3, 2013.
