Hillary Dixler Canavan is Eater's restaurant editor and the author of the publication's debut book, Eater: 100 Essential Restaurant Recipes From the Authority on Where to Eat and Why It Matters (Abrams, September 2023). Her work focuses on dining trends and the people changing the industry — and scouting the next hot restaurant you need to try on Eater's annual Best New Restaurant list.

Here's a video from Stockholm, Sweden's Restaurant Frantzéncurrently ranked #12 on the World's 50 Best list — that distills their two hour dining experience into three minutes. The video shows chef Björn Frantzen (of @Sweden tweeting fame) and his team plating their way through course after course of the restaurant's tasting menu. The video slows to show closeups of the dishes at Frantzén, including Oyster "45 min" with Elderflower & Jersey cream, Soup of fermented Rye with Quark & smoked lard, and "Satio Tempestas" with 46 Ingredients. Go, watch.
