While in London earlier this week, Massimo Bottura and Daniel Patterson sat down for an interview with Bloomberg to talk about the gastronomic adventure that is Cook it Raw. (Patterson also sat in on a panel at London's Royal Geographic Society for the Cook it Raw book launch.)
In this video, Bottura talks about how important the trip has been for him in terms of opening his mind up to new inspiration, saying, "If you leave this kind of space free for a little bit of poetry and not get obsessed with everyday life, you can jump in that poetry. It creates dishes like edible poetry." Patterson, meanwhile, discusses about the importance of forming bonds with fellow chefs and why sometimes stepping away is key for running a restaurant.
