Eater Young Guns semi-finalist John Poiarkoff landed a job at The Modern restaurant in Midtown Manhattan straight out of culinary school (FCI) and swiftly worked his way up to a sous chef position. After five years at the restaurant he joined chef Angelo Romano's eight month-old eccentric, modern and heavily praised Brooklyn restaurant The Pines, where he is second in command, has a say in many of the dishes, and contributes to the cocktail list.
Says former boss Danny Meyer of Poiarkoff, "When he left the Modern everybody was so sad to see him go, because he has the whole package, just a great guy, amazing cook...When you go to The Pines you'll see he's doing cooking that is intellectual and soul satisfying at the same time. You usually get one or the other but it's usually rare to get both." Poiarkoff discusses the new restaurant and his place within it in the video above.
