Phaidon has announced Swedish chef Magnus Nilsson is working on a second cookbook. His first book, also with Phaidon, helped make Nilsson an internationally recognizable name. This new book won't focus on the restaurant though; instead, it will be a comprehensive look at Nordic cuisine, highlighting regional variation with 1,000 recipes.
"The idea is that there has been nothing comprehensive published in English on Nordic cooking, basically ever," Nilsson says over on the Phaidon blog. "There have been books about Scandinavian cooking or on national cooking back in the 1970s but nothing since then. And everyone confuses the countries and the regions and no one really understands how diverse it all is." So think a cross between Fäviken and the Silver Spoon, but Scandinavian.
Nilsson is hitting the road for the project, and will be updating his travels on the Phaidon blog. Also, they're going to put up a survey for Nordic food lovers to fill out to help him in his research. According to a rep, a publication date is not set but it will probably come out in 2015.
