Here's a fun peek inside family meal at the Union Square Hospitality Group: Danny Meyer recently joined USHG culinary director Michael Romano at Google for a chat about Romano's cookbook with Karen Stabiner Family Table. They start off by talking about the restaurant group itself, how they met, and the importance to family meal. True to form, the king of hospitality argues that family meal is about putting your own people first. As Meyer says, "You can make more customers happy if you put your customers second."
Beyond the fun anecdotes about Meyer dropping a tray of champagne on Romano's lap and trips they took together, the pair also discuss Family Table and cookbooks in general. Romano says that the book and its recipes focus on the cooks and it's "not about the high-profile chefs." And Meyer says that while some cookbooks might be meant more as souvenirs with gorgeous pictures, USHG wants this to be a book that feels authentic to the family meal experience and that people will actually use. Since the audience is Google nerds, Meyer also talks a little about the future of cookbooks, ebooks and warns them not to get into the 3D-printed steak business.
