Here's San Francisco chef Charles Phan giving a Google Talk in which he discusses his first cookbook, Vietnamese Home Cooking. Jeffrey Freburg, one of Google's executive chefs, conducts the interview, which winds its way through Phan's flair for mixology, his experiences in Vietnam, the success of The Slanted Door, and what he calls "Buddha restaurant" designs. Phan also discusses how he wants people to cook from his book: "You shouldn't follow the recipe. I think you should understand why we do what we do ... because there's a reason for it."
