Regarding Joshua Skenes' San Francisco restaurant Saison (which doesn't post its dinner menu or wine and cocktail lists online): "I'd love to be able to look on the restaurant's website and say, 'Hey, they're finally serving lichen-crusted abalone, maybe I'll go check it out.'"
