Watch a Behind the Scenes Look at the Food in Hannibal

Hillary Dixler Canavan is Eater's restaurant editor and the author of the publication's debut book, Eater: 100 Essential Restaurant Recipes From the Authority on Where to Eat and Why It Matters (Abrams, September 2023). Her work focuses on dining trends and the people changing the industry — and scouting the next hot restaurant you need to try on Eater's annual Best New Restaurant list.

Here's a look at the role food plays in the new Hannibal series. In The Hollywood Reporter's video, creator/executive producer Bryan Fuller explains cannibal psychiatrist Dr. Hannibal Lecter's motto "Eat the rude": "If you're a pig of a human being, you deserve to be his bacon." Within the show, intricate and creepy scenes of Hannibal cooking and eating are central to establishing his "sophisticated" character.

Chef José Andrés, the show's "culinary consultant," explains his job: "That's my role, making sure that food is there to send hidden messages to the viewers to who Hannibal is." Fuller says he chose chef José Andrés to be his "culinary consultant" because he "knew [he] wanted to make the reality of a cannibal chef real, so if there was one chef [he] wanted to emulate it was José Andrés." Strangely put.
