Here's a Super Intense Preview of the Alinea Menu

Hillary Dixler Canavan is Eater's restaurant editor and the author of the publication's debut book, Eater: 100 Essential Restaurant Recipes From the Authority on Where to Eat and Why It Matters (Abrams, September 2023). Her work focuses on dining trends and the people changing the industry — and scouting the next hot restaurant you need to try on Eater's annual Best New Restaurant list.

Here's a video from Grant Achatz and the team at Alinea in Chicago that showcases the drama of their dishes. Shot in super high speed, the one minute and 47 second-long video shows everything from the making, rolling, and stuffing of pasta dough to the garnishing of dishes with flowers. The Alinea Facebook page explains the video features current menu items. Comparing the video to the photographs from blogger Bonjwing Lee's recent trip, it seems some of the dishes featured in the video might be: Opaka Paka, Ehu, Maitake, Carrot, and Dark Chocolate. (These dishes are not listed on the menu currently online, however.) The whole thing is set to super intense cello music: suspenseful. Definitely watch to the end to see a shattered chocolate orb reconstitute itself.
