Her work focuses on dining trends and the people changing the industry — and scouting the next hot restaurant you need to try on Eater's annual Best New Restaurant list.

Here's a way to get a Di Fara Pizza fix without traveling to Brooklyn. The bow-tied Christopher Kimball of America's Test Kichen went to the pizza mecca to interview pizzaiolo Domenico DeMarco. DeMarco—who has been making pizza for almost fifty years since he emigrated from Italy—is still involved with every aspect of pizza-making at Di Fara's. There's no written recipe, DeMarco explains, "I just use my eye." DeMarco talks through his cooking process and brings the camera into the kitchen with him as he prepares one of his famous pies. A highlight of the interview is watching DeMarco navigate Kimball's questions about the epic wait times customers face at Di Fara. Says DeMarco, "I tell them to take a day off when they come over here."

More Di Fara Pizza goodness can be found in this documentary about DeMarco, and this video from A Life Worth Eating's Adam Goldberg. Below, the pizza master speaks.
