Charlie Rose hung out with David Chang late last week, who demonstrated the Momofuku fried chicken technique. When Rose shockingly revealed he prefers white meat to dark, Chang was dismayed: "Charlie, how can we be friends now?" Jokes aside, Chang says his focus these days is on "basic, simple cooking" and achieving new flavors by making his own staples like soy sauce and miso: "I can just cook fried chicken, something that everyone does, but I can do it with new flavors nobody's ever tasted before. So the old is really new. It doesn't have to be in this weird, post-modern, deconstructed way." Go, watch:
