Take a Tour of Fäviken with Magnus Nilsson

Here's a video from Crane.tv of Magnus Nilsson giving a tour of Fäviken. The 12-seat restaurant in Järpen, Sweden, about 400 miles north of Stockholm, is currently #34 on the World's 50 Best List. In the video, Nilsson explains the seasonal cycle of the Fäviken menu, at the center of which is the extremely long Järpen winter. There's a tour of the vegetable cellar that's home to "ongoing experiments and fermentations." The location of the restaurant is a challenge for Nilsson, his staff, and his would-be guests, but Nilsson wouldn't have it any other way. "The geography acts like a filter," says Nilsson. "It filters away customers that are coming to restaurants for the wrong reason and it leaves out the determined ones, the ones that are really, truly interested in what we do. Which is great."
