Good news for caviar lovers in Las Vegas. Back in February, the Bellagio introduced an all-you-can-eat caviar station to its buffet. According to the Las Vegas Sun, these past few weeks have been a test, and now the Bellagio's bottomless (yes, bottomless) caviar program is now officially a permanent fixture of the $37.99 Gourmet Dinner experience. On deck: black American sturgeon caviar, red flying fish roe, and salmon roe.
The original press release from Bellagio introducing the "Unlimited Caviar" option back in February did not suggest that the station was temporary. It did suggest, however, that huge amounts of caviar would be available to Bellagio diners on Friday and Saturday nights, and that the selection would "please every palate."

The Buffet at Bellagio, known for its high-quality cuisine and exceptional service, announces the addition of a lavish new station featuring Traditional, Ikura and Tobiko caviars. Every Friday and Saturday from 3:30 p.m. – 10 p.m. during Gourmet Dinner Service, guests may savor the delicate flavors of some of the world's finest caviars alone or as complements to a selection of freshly prepared traditional dishes. This decadent option comes included in the Gourmet Dinner price of $37.99.
At this one-of-a-kind station, a chef attendant will top delicate, house-made blinis, miniature buckwheat waffles, freshly rolled sushi and Ahi tuna cones, according to each guest's desires. A variety of traditional garnishes including chopped egg, onions and crème fraîche are available to create unforgettable flavor profiles that please every palate.
If you're thinking that some diners might not be able to handle the abundance, you're right. "We do have some people who come up with a bowl and want us to fill it up," assistant buffet chef Frank Ortiz said to the Las Vegas Sun's Ron Sylvester. "But we like to respect the integrity of the dish." Of course.
