Here's White House pastry chef Bill Yosses advocating a "hedonistic culture of healthy eating" at the food-focused TEDx Manhattan event. Calling himself a "repentant pastry chef," Yosses says the role of the pastry chef in a discussion of healthy eating is like "when a member of one political party advocates something from the other political party, then people really listen." He goes on to cite chefs that manage to keep an eye on healthy cooking while continuing to push the culinary envelope, like Dan Barber, Cesare Casella, and Michel Nischan. Go, watch:
